Our menu blends Japanese and Western techniques, drawing inspiration from yakitori grilling, sourdough baking, and traditional ferments like umeboshi and miso — all made in-house.
The result is a thoughtful, nourishing dining experience that evolves daily, reflecting what’s in season, what we’ve preserved, and what we’re excited to cook over coals.
